Dried shrimp and orange ceviche

Ingredients

  • 4 cups dried shrimp
  • 1 cup orange juice to soften the shrimp
  • 1 cup white onion
  • 1 cup grated carrot
  • ½ cup lime juice
  • 1 chopped serrano chile
  • 1 cup chopped cilantro
  • The shrimp in Nayarit is dried and is a form of conservation, they are the flavors of all the life of the coast and a way to have shrimp all year round.
  • They are sewn in water with plenty of salt and put to dry in an oven at 100 degrees Celsius, until they are dehydrated.
  • In a container add all the ingredients, let them rest and check their salt at the end.
  • Serve in a glass or on toast

TIP

  • Do not salt until the end, as the shrimp will dry in brine.
